Sate Madura

Ingredients

1 1/2 lb. leg of lamb, cut into
3/4 " cubes
1/3 c. sweet soy sauce
1/2 t. ground coriander seed, crushed.
1/4 t. crushed black pepper
1 T. lime juice
3 shallots, peeled and sliced.

Preparation

  1. Thread the lamb onto satay skewers. In a bowl, mix the remaining ingredients except the shallots.
  2. Brush each skewer with the sauce coating well. Grill or broil the skewers until medium rare.
  3. Stir the sliced shallots into the remaining sauce and serve as a dip for the cooked satay.
