Indonesian Fried Noodles - Bakmi Goreng

Ingredients

Egg Noodles
1 Shallot
1 clove Garlic
2 eggs
1/4 lb Shrimp - deveined and cut into little pieces
1/4 lb Meat Balls - sliced thin
1/4 lb Chicken - sliced thin
Onion leaves, Cabbage, Bean Sprouts, or any desired vegetables
Lemon/lime juice
Soy sauce
Sweet soy sauce
Salt, white pepper
Oil

Preparation

  1. Beat eggs and fry in 1 tablespoon of oil. Cut into little pieces, set aside.
  2. Boil or immerse the noodles in hot water until a little soft (not too limp).
  3. Heat 3 tablespoons of oil, fry garlic, then the shallots. (Add onion leaves if applicable) When it's a little yellowish brown, add shrimp. Stir fry until color turns pink. Add a dash of lemon/lime juice, white pepper, and salt.
  4. Put in the chicken and stir fry for 2 minutes. Add sliced meatballs. Stir fry for another 2 minutes. Add the vegetables and mix well for another 2 minutes. Add about 5 tablespoon of sweet soy sauce, 1 tablespoon of soy sauce, dash of salt, white pepper, and 1/4 cup water. Bring to boil.
  5. Drain water from the noodles and put noodles in the meat mixture. Stir until all liquid evaporates. If necessary , add more sweet soy sauce or soy sauce. Always add pepper and salt before the noodles are being added. Mix in fried eggs with noodles.
  6. Garnish with fried shallots and onion leaves.
