Ingredients
Egg Noodles1 Shallot
1 clove Garlic
2 eggs
1/4 lb Shrimp - deveined and cut into little pieces
1/4 lb Meat Balls - sliced thin
1/4 lb Chicken - sliced thin
Onion leaves, Cabbage, Bean Sprouts, or any desired vegetables
Lemon/lime juice
Soy sauce
Sweet soy sauce
Salt, white pepper
Oil
Preparation
- Beat eggs and fry in 1 tablespoon of oil. Cut into little pieces, set aside.
- Boil or immerse the noodles in hot water until a little soft (not too limp).
- Heat 3 tablespoons of oil, fry garlic, then the shallots. (Add onion leaves if applicable) When it's a little yellowish brown, add shrimp. Stir fry until color turns pink. Add a dash of lemon/lime juice, white pepper, and salt.
- Put in the chicken and stir fry for 2 minutes. Add sliced meatballs. Stir fry for another 2 minutes. Add the vegetables and mix well for another 2 minutes. Add about 5 tablespoon of sweet soy sauce, 1 tablespoon of soy sauce, dash of salt, white pepper, and 1/4 cup water. Bring to boil.
- Drain water from the noodles and put noodles in the meat mixture. Stir until all liquid evaporates. If necessary , add more sweet soy sauce or soy sauce. Always add pepper and salt before the noodles are being added. Mix in fried eggs with noodles.
- Garnish with fried shallots and onion leaves.
