
INGREDIENTS
* 1/2 cup whole-milk yogurt
* 2 tablespoons olive oil
* 4 teaspoons freshly squeezed lemon juice
* 2 teaspoons dried curry powder
* 2 teaspoons shallot, peeled and minced
* 2 teaspoons ginger, peeled and minced
* 2 cups cooked turkey, medium dice
* 1/2 cup sweet apple, such as Fuji, small dice
* 1/2 cup toasted unsweetened coconut flakes
* 1/4 cup raisins
* 3 tablespoons fresh cilantro, coarsely chopped
INSTRUCTIONS
1. Whisk together yogurt, olive oil, lemon juice, curry powder, shallot, and ginger in a medium nonreactive bowl until well combined.
2. Add remaining ingredients and stir until well coated. Season with salt and freshly ground black pepper; serve.
